Warm Couscous Salad

Elevate your mealtime with this Warm Couscous Salad. Packed with fresh veggies, feta, and olives, it’s a quick yet flavorful dish.


  • 2 cups chicken stock
  • 2 cups couscous
  • 1 cucumber, chopped
  • 150 g feta, crumbled
  • 2 tomatoes, diced
  • 2 spring onions, sliced
  • ½ cup chopped flat-leaf parsley
  • ½ cup pitted black olives


  1. In a saucepan, bring the chicken stock to a boil.
  2. Add the couscous to the boiling chicken stock and stir to combine.
  3. Remove the saucepan from the heat, cover it, and let it stand for 6 minutes.
  4. Transfer the cooked couscous to a mixing bowl, then fluff it with a fork.
  5. Add the remaining ingredients to the couscous in the bowl.
  6. Season the salad with salt and pepper to taste before serving.
