Ingredients:
- 2 cups chicken stock
- 2 cups couscous
- 1 cucumber, chopped
- 150 g feta, crumbled
- 2 tomatoes, diced
- 2 spring onions, sliced
- ½ cup chopped flat-leaf parsley
- ½ cup pitted black olives
Directions:
- In a saucepan, bring the chicken stock to a boil.
- Add the couscous to the boiling chicken stock and stir to combine.
- Remove the saucepan from the heat, cover it, and let it stand for 6 minutes.
- Transfer the cooked couscous to a mixing bowl, then fluff it with a fork.
- Add the remaining ingredients to the couscous in the bowl.
- Season the salad with salt and pepper to taste before serving.
