500 grams strong bread flour
300ml warm water
7g instant yeast
40 grams honey
10 grams salt
5 tablespoons of dukkha
1 egg, beaten



Mix the yeast, honey, and 100 ml warm water in a small bowl.
Stir and let sit for 10 minutes or until the mixture becomes frothy and active.
Mix flour, dukkha, and salt in a large mixing bowl.
Mix well. Slowly add the activated yeast mixture to the flour and the remaining 200ml of warm water and stir until the dough comes together.
Turn the dough onto a floured surface and knead for about 8 minutes using the method described below: With the heel of your hand, push and stretch the far edge of the dough towards you, then away from you. Rotate the dough at 90° and repeat this pushing and stretching process with a rhythmic, rocking motion until the dough is bouncy and smooth.
Place the dough in a greased bowl and let it rise for 1 hour or until it has doubled in size.
You can use your oven as a warm and draft-free environment for the dough to rise by turning off the oven and placing the bowl of dough inside.

Use expert mode on your De Dietrich oven and select the bread setting. Start the oven by pressing play and place a container of hot water on the bottom of the oven. If you don’t have a De Dietrich oven, set the temperature to 205°C.
Turn the dough onto a lightly floured surface and shape it into a ball.
Place the ball of dough onto a baking sheet or cast iron pan and place it on the 2nd shelf of the oven.
Brush the surface of the dough with the beaten egg and sprinkle with your favorite seasoning salt flakes.
Bake for 35-40 minutes until the bread is golden brown and sounds hollow when tapped on the bottom.
Remove the bread from the oven and cool it on a wire rack. Serve warm.
