The deliciously easy Risotto Kits from Gault’s Deli have saved my life twice this week! I picked up a couple of these fabulous finds from Simon’s deli in Takanini, not far from SH1 motorway, (available online too and with easy to follow instruction cards.) When friends stayed unexpectedly on Monday I quickly cooked up a simple dinner treat – the “Moroccan Duck” kit complete with tender marinated and vacuum packed duck meat. All I needed to add was a bag of baby spinach to toss through, an onion and an orange. It was full of interesting flavours and only took half an hour from start to finish.
Best of all was the top-quality genuine parmesan and the caramelised balsamic that even came with a little ‘pipette’ to drizzle around and give the risotto a real chef’s touch. Meanwhile I am trying to recover from seasonal ‘flu, coughing all the time and desperately in need of really tasty food. Right now the go-to seasonal food is the truffle but those beauties are expensive and really headed to fancy restaurants. Simon’s “Mushroom Truffle” risotto kit gave me the lift I needed on a gloomy evening. There was rich aromatic mushroom truffle crème to fold through, Alba white truffle salt to season the rice and best of all another pipette for the Alba white truffle oil to finish the ridiculously tasty dish. Truffle heaven!
