New Zealand Cow’s Milk Vintage Cheddar from Barry’s Bay Cheese, Canterbury.
Description
Akaroa Harbour, Canterbury. Pasteurised cow’s milk. Made in 2017 in a traditional clothbound 36kg truckle. A more multi dimensional flavour profile due to the exposed rind with good acidity and fruitiness than other cheddar. Barry’s Bay have been making cheese on the shore of Akaroa Harbour since the 1890’s. This is the style of cheese they would of started with, a traditional version of the English classic. Made in large truckles the clothbound rind allows interaction with the environment (not possible with block style cheddar) resulting in the development of flavours as the cheese matures.
Winner of a bronze medal at the 2020 NZ Cheese Awards.
