Pappardelle are large, very broad, flat pasta noodles, similar to wide fettuccine, originating from the region of Tuscany. Pappardelle is best used with robust sauces such as a slow cooked ragu.
Fattorie Umbre strictly respects the traditional home-made methods of production by using a slow dehydration process at low temperature. To ensure the correct grainy texture and thickness of the finished product, only top quality raw materials are used. The pasta consists of durum wheat flour and fresh pasteurised eggs. The drying-out process is carried out on racks over a period of 16-20 hours in order to retain all the nutritional values of the original ingredients
