Mezze Penne Rigate with Pesto Rosso Bundle

A rich Sicilian red pesto made with fresh tomatoes, basil, walnuts and creamy ricotta cheese. Full of Mediterranean flavour, it is a quick and easy way to make a great pasta dinner.

How to use it:

Cook your pasta until al dente and reserve a little of the cooking water. Toss the pasta with Pesto Rosso and enough pasta water to create a glossy sauce.

For a simple finish, add torn mozzarella and fresh basil. It is particularly good with Liguori Mezze Penne Rigate, but also works beautifully on bruschetta or spread into sandwiches.

Liguori Mezze Penne Rigate is made in Gragnano, Italy, using 100% Italian durum wheat and pure water from the Lattari Mountains.

Bronze-drawn and slowly dried at a low temperature, the ridged penne has a rough surface that holds onto sauces beautifully. Its short shape and ridges make it ideal for rich tomato sauces, pesto and baked pasta dishes.

Easy recipe suggestion:

Cook the mezze penne until al dente, reserving a cup of pasta water. Toss with Campo d’Oro Pesto Rosso and a splash of pasta water. Finish with torn mozzarella and fresh basil.
