Mozzarella, Peaches, and Tomato Salad

– 2 Peaches
– 500 grams Assorted Tomatoes
– 1 Fresh Mozzarella Ball
– ¼ cup Tarragon
– ¼ cup Basil Leaves
– 2 tablespoons Balsamic Vinegar
– 2 tablespoons Extra Virgin Olive Oil
– Murray River Salt (or Himalayan Pink Salt) for seasoning


1. Begin by removing the stones from the peaches and roughly chopping them.
2. Chop the assorted tomatoes into different shapes, aiming to keep the size of the peach and tomato pieces roughly the same. Combine them in a large bowl.
3. Tear the fresh mozzarella ball into chunks and add it to the peaches and tomatoes.
4. Tear the basil leaves and chop the tarragon, then add them to the salad.
5. Gently mix all the ingredients to combine and transfer the salad to a serving bowl or platter.
6. Drizzle the balsamic vinegar and extra virgin olive oil over the salad.
7. Season the salad with Murray River Salt (or Himalayan Pink Salt) to taste.
